Mexican Casserole - The Helper Taco Casserole

This Mexican Casserole recipe is very delicious. This is for a large amount so size it down accordingly.

Ingredients:
  • 3 lbs ground beef or whatever ground protein you desire
  • 3 Packets Taco Seasoning
  • 2 tablespoons butter or margarine
  • 1 green bell pepper chopped - optional
  • 1 medium onion chopped
  • 2 (10 oz) cans diced tomatos with green chiles (Rotel), undrained
  • 1 can golden corn (not creamed) or hominy corn
  • 1 (10 3/4 oz) can cream of chicken soup, undiluted
  • 1 small 8 oz or less taco sauce (temp dependent on how hot you want it) or can of enchilada sauce (same heat on enchilada sauce)
  • 12-18 (6 in.) corn tortillas (depending on how thick you want your tortilla layers)
  • 4 Cups (16 oz) shredded cheddar cheese
  • 13x9x2 baking dish
  • Large skillet
Instructions:
  • Make Taco Meat as per Directions on your taco seasoning packet and set aside
  • Melt butter in a large skillet over medium heat
  • Add chopped bell pepper, corn (optional) and onion and cook stirring constantly until tender crisp
  • Remove from heat and stir in meat, diced tomatoes and chiles (rotel), enchilada sauce and/or taco sauce and soup
  • You will need a pretty good sized pot or pan to fit everything once it is mixed
  • Place one third of the Tortilla Quarters in the bottom of a lightly greased 13x9x2 baking dish
  • Top with 1/3 of the taco mixture, and sprinkle evenly with 1/3 of the shredded cheese
  • Repeat layers twice reserving the last third of the cheese
  • Bake at 350 degrees for 40 minutes uncovered
  • Remove from oven and sprinkle on reserve 2/3 cup of cheese and bake uncovered for an additional 5 minutes
  • Let stand at least 5 minutes before serving
Note:
  • Makes 8 to 10 Servings.

If only I got more people in my house to eat this together...I was hoping for a smaller, 1 or 1½ servings version of The Helper Recipes. Don't have much money now that I had bought some gifts since Christmas. I do love The Helper for sharing with all of this. It was totally unexpected for a tech forum to share cooking topics. :D

If you want a half serving cut the ingredients in half. Only use a pound of hamburger meat and one pack of seasoning, and half as much of everything else. Still cook it for the same amount of time though and do everything else the same. If you want smaller then just keep proportionally reducing the ingredients. You will need something to bake it in though if you go smaller than a pan you have.

I agree, I can't tell you how many times "Come over, I'll cook you dinner" or something of the such has worked for me. haha
You'd be surprised how much girls like having dinner cooked for them. It will work out in your favor if you can cook. ;)

This recipe is under review. I am going to make a scaled down version of this and update the recipe to that instead of the current one. The current recipe does not scale down to a pound of meat right now like I want it to. If you are doing 3 lbs of meat though, this recipe hits it there!

    Actually I was just playing with having some kind of mention of the food forum and recipes on the main page to test and see if it would engage some of those people to post something. It is just weird to get so much traffic and no engagement

    The bots will show up as users online in the forum software but they do not show up in my stats tracking. I am sure there are bots in the stats but the way alot of the bots treat the site do not show up on the stats

    Another issue I'm learning is that a lot of the air quality sensors don't work at very high ambient temperatures. I'm planning on heating this enclosure to like 60C or so, and that's the upper limit of their functionality

    I bitch about Xenforo sometimes but it really is full featured you just have to really know what you are doing to get the most out of it.

    I do know this - xenforo dropped the ball by not keeping the vbulletin reputation comments as a feature. The loss of the Reputation comments data when we switched to Xenforo really was the death knell for the site when it came to all the users that left. I know I missed it so much and I got way less interested in the site when that feature was gone and I run the site.
