Can someone please explain to me the 12000 different evangelion series and how they differ from each other.

I just need to figure out which order to watch everything in.

Okay, Neon Genesis of Evangelion is 26 episodes.
End of Evangelion replaces the last 2 Episodes (25-26) as it explains what is going on physically where as the last 2 episodes explain what is happening to them mentally. (Which is why I sometimes suggest stopping at episode 24 and watching the movie then watching the last two episodes)

Rebirth and Death, ehhh... More of a movie just to please people. You know how anime movies are.

Rebuild of Evangelion 1.0, 2.0, 3.0 and 4.0
Are the entire recreation of the series to make it simplier on newer audiences and put Evangelion finally to rest.

That's how I sum it up.
Neon Genesis of Evangelion -> End of Evangelion -> Rebuild of Evangelion is how I would watch it.

All the Rest is just stuff to keep fangirls/boys happy. It is a wonderful classic that every time you watch it you learn something new. (I have watched it countless times, at least 8 times and have found something new out every single time.
