Honey Butter Potato Pancakes Stuffed with Cheese
These honey butter potato pancakes stuffed with cheese are a comforting and savory treat with a hint of sweetness.
Ingredients:
Potato Pancakes:
- 2 cups mashed potatoes (leftover or freshly made)
- 1/2 cup all-purpose flour
- 1 large egg
- 1/4 cup chopped green onions
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
- 2 Tbsp butter for cooking
- Large bowl
- Large skillet
- 1/4 cup honey
- 1/4 cup unsalted butter, melted
- Small bowl
- In a large bowl, combine the mashed potatoes, flour, egg, green onions, salt, and pepper, then mix until well combined
- Take a small handful of the potato mixture and flatten it into a pancake shape and place about a Tablespoon of shredded cheese in the center
- Top with another small handful of the potato mixture and flatten it to seal the cheese inside, then repeat with the remaining mixture
- Heat a large skillet over medium heat and melt the butter
- Cook the pancakes in batches, about 3-4 minutes per side, or until golden brown and crispy, making sure the cheese is melted inside
- In a small bowl, combine the honey and melted butter and mix until smooth
- Drizzle the honey butter over the hot potato pancakes
- Serve immediately
