King Ranch Chicken

Its like Enchilada Lasanga

Ingredients:
  • 4 skinned and boned chicken breast halves
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 Tablespoons butter or margarine
  • 1 green bell pepper chopped
  • 1 medium onion chopped
  • 2 10 oz Rotel undrained (Use Habenaro Rotel to kick it up a notch)
  • 1 10 3/4 oz can cream of chicken soup
  • 1 10 3/4 oz can cream of chicken mushroom
  • 12-18 6 inch corn tortillas - depending on how thick you want your tortilla layers
  • 2 Cups Shredded Cheddar Cheese or a mexican blend (Use Habanero Cheese to kick it up a notch)
  • Large skillet or Wok
  • 13 x 9 baking dish
Instructions:

Baked Chicken:
  • Season chicken with salt and pepper to taste or use Cajun Spice like Slap Ya Mama (add Cayenne Pepper to taste to kick it up a notch)
  • Place chicken in a 13x9x2 greased baking dish and bake at 350 degrees for 20 minutes or until chicken done (not pink inside when cut in half)
  • You can also used grilled or frozen chicken in this recipe to skip this step - grilled chicken makes it the BEST!
  • If chicken is frozen defrost in microwave
  • Coarsely chop chicken (not too big chunks) and set aside
  • Melt butter in a large skillet over medium heat
  • Add chopped bell pepper and onion and cook stirring constantly until carmelized
  • Add in chopped chicken, diced tomatoes and chiles (rotel) and soups
  • Stir it well and set aside
Preparation and Baking:
  • Place one third of the Tortilla Quarters in the bottom of a lightly greased 13x9x2 baking dish
  • Top with 1/3 of the chicken mixture, and sprinkle evenly with 2/3 cup shredded cheese
  • Repeat layers twice reserving the last 2/3 cups of cheese.
  • Bake at 325 degrees for 35 minutes uncovered
  • Put on the reserve 2/3 cup of cheese and bake uncovered for an additional 10 minutes until cheese is browned how you want
  • Let set 5 minutes before serving.
Note:
  • Makes 6 to 8 Servings.

Ah, the next Jamie Oliver. :) I can't see how well done the chicken breasts are from that picture. :( Hopefully, there's a lot of veggies in there for a balanced meal.

OK just made a variation with Taco Meat that is Way Better!

Replace Chicken with a pound of taco meat. 1 can Cream of Chicken Soup, 2 cans Green Chiles and Habaneros (the Hot Rotel). Do everything the same way except use more Corn Tortillas or optionally Replace with Flour or Wheat Tortillas or Chips for the Layers. Or if you are are feeling Awesome Fry Corn Tortillas to Chips as the Layers. Freaking Awesome Stuff!!!

I tried to get a picture but it got ate too quick :)

Taco meat isn't anything in specific. It's simple meat (I forgot what kind in specific), just cut up into pieces with a cleaver.

Taco Meat is Ground Beef mixed with Taco Seasoning and water then boiled for a few minutes to soak all the Taco goodness into it.

All cans are around 10 oz. You dont have to be exact. I am doing the proper recipe now by editing the original post.

There are multiple variations on this recipe. I am going to use this as a base and find out which one is actually the best King Ranch!

    I bought an Ender 3 during the pandemic and tinkered with it all the time. Just bought a Sovol, not as easy. I'm trying to make it use a different nozzle because I have a fuck ton of Volcanos, and they use what is basically a modified volcano that is just a smidge longer, and almost every part on this thing needs to be redone to make it work

    Luckily I have a 3d printer for that, I guess. But it's ridiculous. The regular volcanos are 21mm, these Sovol versions are about 23.5mm

    So, 2.5mm longer. But the thing that measures the bed is about 1.5mm above the nozzle, so if I swap it with a volcano then I'm 1mm behind it. So cool, new bracket to swap that, but THEN the fan shroud to direct air at the part is ALSO going to be .5mm to low, and so I need to redo that, but by doing that it is a little bit off where it should be blowing and it's throwing it at the heating block instead of the part, and fuck man

    I didn't realize they designed this entire thing to NOT be modded. I would have just got a fucking Bambu if I knew that, the whole point was I could fuck with this. And no one else makes shit for Sovol so I have to go through them, and they have... interesting pricing models. So I have a new extruder altogether that I'm taking apart and going to just design a whole new one to use my nozzles. Dumb design.

    Can't just buy a new heatblock, you need to get a whole hotend - so block, heater cartridge, thermistor, heatbreak, and nozzle. And they put this fucking paste in there so I can't take the thermistor or cartridge out with any ease, that's 30 dollars. Or you can get the whole extrudor with the direct driver AND that heatblock for like 50, but you still can't get any of it to come apart

    Partsbuilt has individual parts I found but they're expensive. I think I can get bits swapped around and make this work with generic shit though
