King Ranch Chicken
Its like Enchilada Lasanga
Ingredients:
- 4 skinned and boned chicken breast halves
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons butter or margarine
- 1 green bell pepper chopped
- 1 medium onion chopped
- 2 10 oz Rotel undrained (Use Habenaro Rotel to kick it up a notch)
- 1 10 3/4 oz can cream of chicken soup
- 1 10 3/4 oz can cream of chicken mushroom
- 12-18 6 inch corn tortillas - depending on how thick you want your tortilla layers
- 2 Cups Shredded Cheddar Cheese or a mexican blend (Use Habanero Cheese to kick it up a notch)
- Large skillet or Wok
- 13 x 9 baking dish
Chicken Mix:
Baked Chicken:
- Season chicken with salt and pepper to taste or use Cajun Spice like Slap Ya Mama (add Cayenne Pepper to taste to kick it up a notch)
- Place chicken in a 13x9x2 greased baking dish and bake at 350 degrees for 20 minutes or until chicken done (not pink inside when cut in half)
- You can also used grilled or frozen chicken in this recipe to skip this step - grilled chicken makes it the BEST!
- If chicken is frozen defrost in microwave
- Coarsely chop chicken (not too big chunks) and set aside
- Melt butter in a large skillet over medium heat
- Add chopped bell pepper and onion and cook stirring constantly until carmelized
- Add in chopped chicken, diced tomatoes and chiles (rotel) and soups
- Stir it well and set aside
- Place one third of the Tortilla Quarters in the bottom of a lightly greased 13x9x2 baking dish
- Top with 1/3 of the chicken mixture, and sprinkle evenly with 2/3 cup shredded cheese
- Repeat layers twice reserving the last 2/3 cups of cheese.
- Bake at 325 degrees for 35 minutes uncovered
- Put on the reserve 2/3 cup of cheese and bake uncovered for an additional 10 minutes until cheese is browned how you want
- Let set 5 minutes before serving.
Makes 6 to 8 Servings.
