Shrimp Pasta with Vodka Sauce
This is a simple Shrimp Pasta with Vodka Sauce recipe that makes a perfect dinner.
Ingredients:
- 1 pound of shrimp, peeled and deveined
- 8 ounces of pasta (penne or fettuccine work well)
- 2 Tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup vodka
- 1 can (14 ounces) of crushed tomatoes
- 1/2 cup heavy cream
- Salt and pepper to taste
- Crushed red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (for serving)
- Large skillet
- Cook the pasta according to the package instructions until al dente, then drain and set aside
- In a large skillet, heat the olive oil over medium heat
- Add the minced garlic and cook for about 1 minute until fragrant
- Add the shrimp to the skillet and cook until they turn pink and opaque, about 2-3 minutes per side
- Remove the shrimp from the skillet and set aside
- Deglaze the skillet with vodka, stirring and scraping up any browned bits from the bottom of the pan
- Let it cook for about 2 minutes to reduce slightly
- Stir in the crushed tomatoes and bring the sauce to a simmer
- Let it cook for about 5 minutes, allowing the flavors to meld together
- Reduce the heat to low and stir in the heavy cream
- Season the sauce with salt, pepper, and crushed red pepper flakes if using
- Return the cooked shrimp to the skillet and let them heat through in the sauce for a minute or two
- Add the cooked pasta to the skillet and toss everything together until the pasta is well coated in the sauce
- Serve the shrimp pasta with vodka sauce hot, garnished with chopped parsley and grated Parmesan cheese on top
