How do you make it so that when you aquire a item and hold it your stats goes up for like attack or defence but when you drop it it goes down.

Those are permanent items. Look in the object editor under items and permanet. Then copy one of those, change name and icon to your choice, and set the attack or defense value to what you want.

Like claws of attack, after you copy it you can set the new attack value to +1000 if you like or what ever.

Is there a way to make it so they can only hold 1 or 2 items???

i think your talking about the inventory. you can make a copy of the inventory ability(in the object editor under abilitys) then change the number of inventory slots to 2. then give this ability new to the unit you want.
