Berry and Peach Cheesecake
Bask in the glory of summer flavors with this Berry and Peach Cheesecake recipe.
Ingredients:
Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 Tablespoons sugar
- 9-inch springform pan
- Mixing bowl
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- Raspberry and peach slices layer:
- 1 cup fresh raspberries
- 1 large peach, sliced
- Mixing bowl
- 1 cup heavy cream
- 2 Tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- Mixing bowl
- Additional fresh raspberries
- Peach slices
- Mint leaves
- Preheat oven to 350 F (175 C)
- In a bowl, mix the graham cracker crumbs with melted butter and sugar
- Press into the bottom of a 9-inch springform pan
- Chill for 20 minutes
- In a mixing bowl, beat the cream cheese and sugar until smooth
- Add eggs one at a time, then the vanilla
- Pour the mixture over the crust
- Bake at 350 F (175 C) for 25 minutes
- Allow to cool
- Arrange raspberry and peach slices over the cooled cream cheese layer
- Make the whipped cream topping by whipping heavy cream with powdered sugar and vanilla in a bowl until stiff peaks form
- Spread topping over the fruit layer
- Garnish by decorating the top with additional raspberries, peach slices, and mint leaves
- Chill for at least 4 hours before serving
