Creamy Cajun Crockpot Chicken
A creamy Cajun crock pot recipe that is set it and forget it. Delicious!
Ingredients:
- 1 1/2 lbs chicken breast
- 1 Tablespoon butter or olive oil
- 1 Tablespoon garlic jar or squeeze garlic (can use powder)
- 1 cup onion, chopped
- 1 cup carrots, chopped
- 1 1/2 cup celery, chopped
- 1 1/2 cup bell pepper, chopped (any color or a mix)
- 2 Tablespoons Old Bay or Cajun seasoning
- 2 teaspoon hot sauce
- 1 14 oz can fire roasted tomatoes, drained
- 3 cups chicken broth
- 1/4 cup heavy whipping cream
- 8 oz cream cheese, softened
- Add everything to the crock pot except for the cream cheese and heavy whipping cream
- Cook on low for 6 to 7 hours
- Remove the chicken and shred with fork
- Add the cream cheese and heavy whipping cream to the crock pot
- Add shredded chicken back into the crock pot
- Cook for additional 30 minutes
- Stir it up and serve
Note:
- Serve over rice or pasta
- Stir flour into the sauce if you want to thicken it
