Mediterranean Salmon Patties
Crispy, flavorful salmon patties packed with Mediterranean herbs and feta - perfect for a light and delicious meal!
Ingredients:
- 2 cans (6 oz each) salmon, drained and flaked
- 1 cup fresh spinach, finely chopped (or 1/2 cup thawed, drained frozen spinach)
- 1/4 cup red onion, finely chopped
- 2 cloves garlic, minced
- 1/3 cup feta cheese, crumbled
- 1/2 cup breadcrumbs (panko or regular)
- 2 large eggs, beaten
- 2 Tbsp fresh parsley, chopped
- 1 Tbsp fresh dill (optional)
- 1 Tbsp lemon juice
- 1 tsp lemon zest
- 1 tsp dried oregano
- Salt and pepper, to taste
- Olive oil
- Lemon wedges
- Tzatziki sauce
- Drain the salmon and remove any bones or skin if desired
- Flake it with a fork in a large bowl
- Cook spinach in a dry pan over medium heat for 2 minutes until wilted
- Let it cool, then squeeze out excess moisture
- Add spinach, red onion, garlic, feta, breadcrumbs, eggs, parsley, dill, lemon juice, zest, oregano, salt, and pepper to the salmon, then mix well
- Form the mixture into 6–8 patties, about 3 inches wide
- Heat olive oil in a pan over medium heat
- Cook patties for 3-4 minutes per side until crispy and golden brown
- Drain on paper towels
- Serve with lemon wedges, tzatziki sauce, or a fresh salad
