Is is possible to count how many times a unit evades in a variable using triggers? +rep for any help.

no, but if you trigger the evade, so if the owner is attacked, then add it resistant skin ability with 100% chance to evade 99999 damage, you can detect it.

you can also return the hp back to the unit once that unit takes damage or curse the attacking unit with a 100% curse (2nd method not tested yet) where you remove it when the unit "deals damage" (also not tested if missed attacks deal 0 damage) so that unit will only miss for that attack.
