Swedish Meatball Noodle Bake
This Swedish Meatball Noodle Bake recipe makes a hearty meal with meatballs smothered in a creamy sauce and baked with noodles.
Ingredients:
Meatballs:
- 2 Tbsp olive oil
- 1 pound ground beef
- 1 large egg, beaten
- 1/2 cup breadcrumbs
- 1/2 onion, grated
- 1/2 tsp garlic powder
- 1/4 tsp ground nutmeg
- 1 tsp Kosher salt
- 1/2 tsp freshly ground black pepper
- Large bowl
- Large skillet
- 2 1/2 cups egg noodles
- 1 cup beef broth
- 1 Tbsp Worcestershire sauce
- 1-pint heavy cream
- 1 1/2 cup Swiss cheese, grated
- Fresh parsley, chopped, for serving
- Kosher salt and freshly ground black pepper, to taste
- Large pot for boiling
- 9 x 13-inch baking dish
- Preheat oven to 375 degrees and grease the 9 x 13-inch baking dish
- Place the beef, bread crumbs, egg, onion, nutmeg, garlic powder, salt, and pepper in the large bowl and mix until just combined
- Scoop and roll 1 1/2 Tablespoons of the mixture into a ball and repeat with the remaining mixture
- In the large skillet, heat the olive oil over medium-high heat
- Add the meatballs to the skillet and cook until all sides are browned
- Transfer the meatballs to a plate and set aside
- Cook the noodles in a large pot of salted boiling water for two minutes less than the package directions
- Add the broth, heavy cream, and Worcestershire sauce to the now-empty skillet and scrape up any browned bits on the bottom of the pan
- Allow the mixture to simmer for about 10 minutes until a little thickened
- Season with salt and pepper and take the skillet off the heat.
- Add the pasta to the prepared baking dish and top it with the meatballs
- Over the pasta and meatballs, evenly pour the sauce and sprinkle with cheese
- Place casserole in the preheated oven and bake for about 20 minutes or until the cheese has melted and is bubbly
- Remove casserole from the oven and allow it to sit for about 5 minutes before serving
