When a unit has an ability called Feral Spirit Quill Beast (beast master's), does the enemy neutral hostile automatically cast the spell automatically or do I have to manually order it to do so using triggers? How would I make an ability so that the AI will automatically cast it when they have enough mana / cooldown is oveR?

How do I make a building's model into the gargoyle's stone form model?

Automatically cast the spell automatically? I don't know about that one.

For the gargoyle, I think it's in the same model as the alive one so just give it an animation script thing.

For the first:

Make a trigger like this:

Event:
Unit's mana becomes greaterthan or equal to Manacost of your ability
Condition:
Triggering Unit = Unit with ability
Actions:
Issue order to cast Quillbeast

I don't think cooldown should matter as long as your using orderstrings.
