Cajun Cowboy Cookies
Homemade Cajun Cowboy Cookies are the perfect treat for any occasion.
Ingredients:
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 sticks butter
- 1 1/2 teaspoons vanilla
- 2 eggs
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 2 cups rolled oats
- 1 (6 ounce) package semi-sweet chocolate chips
- 1/2 (6 ounce) package butterscotch chips
- 2 cups finely chopped nuts
- Large bowl for mixing

- Preheat oven to 350 F
- Combine granulated sugar and next 4 ingredients in a large bowl and mix until fluffy
- In a seperate bowl, sift together flour and next 3 ingredients
- Add to sugar mixture and blend well
- Stir in oats, chocolate chips and butterscotch chips
- Place nuts in a small bowl
- Shape rounded teaspoonfuls of dough into balls
- Roll in nuts and place on an ungreased baking sheet
- Bake at 350 F for 18 to 20 minute or until lightly browned
