"((Owner of (Sold unit)) start location)" can be found under "player start location".
No region needed there.
It assumes though your start locations are not near the Tavern, but, instead, where you want your players to start...

There is no way to change the appearing name in the tavern? I've seen many games across battlenet that have the names and descriptions changed.

Change the following:

Text - Proper Names: <hero name> (example: Katrin)
Text - Proper Names Used: 1
Text - Tooltip - Awaken: Revive <hero class> (ex: Revive Blademaster)
Text - Tooltip - Basic: Summon <hero class>
Text - Tooltip - Extended: Put your hero description here like stats and abilities
Text - Tooltip - Revive: Revive <hero class>

Now the name of your desired hero will show to what you've changed the text.
