Gather (Wisp Lumber only)

Is there a way to give a unit the ability to gather lumber as a wisp, but not give it the gold mining ability?

Can you set the gold collected to 0? Although they may still try and collect gold but get nothing

There is no gold collected value. That's in Entagled Gold Mine Ability, which gives gold at a speed based on the number of units it has in it.

I can make a gold only version of the ability by making it unable to target trees, but I can't find a way to make it lumber only.

use the wisp gather ability in the abilitys menu, then add it as a 'Normal' ability. It should work fine after that.

What do you mean? The ability is always in the "Abilities - Normal" section, even for the regular Wisp. The only other option is Default Active, which I believe is just for which ability starts on autocast.
