Scratch Strawberry Cake
This Scratch Strawberry Cake recipe makes a fantastic summer dessert that is as delicious as it is pretty!
Ingredients:
For the Cake:
- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/4 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup vegetable oil
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
- 1/2 cup fresh strawberry puree (about 1 cup fresh strawberries, blended until smooth)
- Red food coloring (optional, for a pink hue)
- 1 cup chopped fresh strawberries
- Three 8-inch round cake pans
- Medium bowl
- Large mixing bowl
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/2 cup fresh strawberry puree (about 1 cup fresh strawberries, blended until smooth)
- 1 teaspoon vanilla extract
- Pinch of salt
- A few drops of red food coloring (optional, for a pink hue)
- Large mixing bowl
- Fresh strawberries, halved
Prepare the Cake:
- Preheat your oven to 350 F (175 C) and grease and flour three 8-inch round cake pans
- In a medium bowl, whisk together the flour, baking powder, and salt, then set aside
- In a large mixing bowl, beat the sugar, softened butter, and vegetable oil until light and fluffy, about 3-4 minutes
- Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients, then mix just until combined
- Fold in the fresh strawberry puree and red food coloring (if using) until evenly incorporated
- Gently fold in the chopped fresh strawberries
- Divide the batter evenly among the prepared cake pans and smooth the tops with a spatula
- Bake for 20-25 minutes, or until a toothpick inserted into the center of the cakes comes out clean
- Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely
- In a large mixing bowl, beat the softened butter until creamy
- Gradually add the powdered sugar, one cup at a time, beating well after each addition
- Add the fresh strawberry puree, vanilla extract, and salt, then beat until smooth and fluffy
- If desired, add a few drops of red food coloring to achieve a pink hue
- Place one cake layer on a serving plate and spread a layer of strawberry frosting on top
- Place the second cake layer on top and repeat with another layer of frosting
- Place the third cake layer on top and frost the top and sides of the cake with the remaining frosting
- Garnish the top of the cake with halved fresh strawberries
