  • 1/2 cup unsalted butter, softened
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1/2 cup fresh strawberry puree (about 1 cup fresh strawberries, blended until smooth)
  • Red food coloring (optional, for a pink hue)
  • 1 cup chopped fresh strawberries
  • Three 8-inch round cake pans
  • Medium bowl
  • Large mixing bowl
For the Frosting:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup fresh strawberry puree (about 1 cup fresh strawberries, blended until smooth)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • A few drops of red food coloring (optional, for a pink hue)
  • Large mixing bowl
For Garnish:
  • Fresh strawberries, halved
Instructions:

Prepare the Cake:

  • Preheat your oven to 350 F (175 C) and grease and flour three 8-inch round cake pans
  • In a medium bowl, whisk together the flour, baking powder, and salt, then set aside
  • In a large mixing bowl, beat the sugar, softened butter, and vegetable oil until light and fluffy, about 3-4 minutes
  • Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients, then mix just until combined
  • Fold in the fresh strawberry puree and red food coloring (if using) until evenly incorporated
  • Gently fold in the chopped fresh strawberries
  • Divide the batter evenly among the prepared cake pans and smooth the tops with a spatula
  • Bake for 20-25 minutes, or until a toothpick inserted into the center of the cakes comes out clean
  • Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely
Prepare the Frosting:
  • In a large mixing bowl, beat the softened butter until creamy
  • Gradually add the powdered sugar, one cup at a time, beating well after each addition
  • Add the fresh strawberry puree, vanilla extract, and salt, then beat until smooth and fluffy
  • If desired, add a few drops of red food coloring to achieve a pink hue
Assemble the Cake:
  • Place one cake layer on a serving plate and spread a layer of strawberry frosting on top
  • Place the second cake layer on top and repeat with another layer of frosting
  • Place the third cake layer on top and frost the top and sides of the cake with the remaining frosting
Garnish:
  • Garnish the top of the cake with halved fresh strawberries
Enjoy!
