Cajun Lime Chicken

This Cajun Lime Chicken recipe is spicy and creamy with a burst of flavor in every bite!

Ingredients:

For the Chicken:
  • 2 large boneless skinless chicken breasts
  • 1 1/2 teaspoons Cajun seasoning
  • 3 Tablespoons flour
  • 1-2 Tablespoons olive oil or avocado oil
  • Meat mallet
  • Skillet
For the Sauce:
  • 1 1/2 cups chicken broth
  • 3/4 cups heavy cream, can substitute with half and half
  • 1 Tablespoon honey
  • 2 teaspoons hot sauce
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon light brown sugar
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon oregano
  • A pinch of cayenne pepper
  • A pinch of red pepper flakes
  • 3 Tablespoons butter
  • 3 cloves garlic, minced
  • 3 Tablespoons flour
  • 10 oz. Rotel diced tomatoes with green chilies, juice reserved
  • 3/4 cup cheddar jack cheese, shredded
  • 2 teaspoons lime juice
  • Measuring cup with spout
For Serving:
  • Lime wedges
  • Fresh cilantro, roughly chopped
Directions:
  • Drain and reserve the juice from the diced tomatoes
  • Combine the sauce ingredients in a large measuring cup with a spout and set aside
  • Slice the chicken in half lengthwise to create thinner slices
  • Cover with saran wrap and pound to 1/2 inch thick using a meat mallet
  • Season with Cajun seasoning and coat with flour
  • Heat oil in a skillet over medium-high heat
  • Sear chicken for 4-5 minutes per side until golden, then set aside
  • In the same skillet, add reserved tomato juice
  • Scrape the skillet clean using a spatula
  • Add butter and garlic then cook for 1 minute
  • Stir in flour for 2 minutes and gradually add the sauce mixture, stirring continuously
  • Bring to a boil, then simmer for 5-7 minutes until thickened
  • Reduce heat, then add cheese gradually until melted, then stir in lime juice
  • Return chicken to skillet and coat with sauce
  • Simmer for 4 additional minutes
  • Add lime wedges and simmer for an additional minute
  • Serve with cilantro garnish
