Crockpot Hobo Casserole
This classic Hobo Casserole, made in a Crockpot or slow cooker is easy, comforting and delicious!
Ingredients:
- 1 pound of ground beef or ground sausage, pre-cooked and drained
- 2 cups of potatoes, diced
- 1 onion, diced
- 1 can (10.5 ounces) cream of mushroom soup
- 2 cups of chicken or beef broth
- 1 1/2 cups of uncooked macaroni noodles
- 1/2 cup of sour cream
- 2 1/2 cups of cheddar cheese
- Salt and pepper to taste
- Sauce pan
- In sauce pan, brown ground beef and drain excess fat
- Grease slow cooker
- Place beef, onion, soup, and potatoes in the cooker and season and stir
- Set cooker to high and cook for 3 hours
- After 3 hours, add broth and uncooked macaroni
- Cover and cook for an additional 30 minutes on high
- Stir in 2 cups cheese and all sour cream
- Sprinkle 1/2 cup cheese on top
- Cover and cook for an additional 20 minutes
