Mexican Chicken with Cheese Sauce
This recipe makes a Mexican spiced chicken topped with a creamy cheese sauce perfect for dinner!
Ingredients:
Chicken:
- 4 boneless, skinless chicken breasts
- 1 Tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Skillet
- 2 Tablespoons butter
- 2 Tablespoons all-purpose flour
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/4 cup cream cheese
- 1/4 cup chopped green chilies
- Salt and pepper to taste
- Chopped cilantro
- Sliced jalapeños
- Diced tomatoes
Chicken:
- Season the chicken breasts with chili powder, cumin, garlic powder, paprika, salt, and pepper
- In a skillet, heat olive oil over medium heat and cook the chicken until golden brown and cooked through, about 6-8 minutes per side
- Remove from skillet and set aside
- In the same skillet, melt butter over medium heat
- Whisk in the flour until smooth
- Gradually add milk, stirring continuously until the sauce thickens
- Add shredded cheddar cheese and cream cheese, stirring until melted and smooth
- Stir in chopped green chilies, and season with salt and pepper
- Slice the cooked chicken and place it on a serving platter
- Pour the warm cheese sauce over the chicken
- Sprinkle with chopped cilantro, sliced jalapeños, and diced tomatoes
- Serve the Mexican Chicken with Cheese Sauce immediately, accompanied by rice, tortillas, or your favorite sides
