Oven Fried Potatoes and Onions

This simple recipe is easy to make and makes a delicious side dish for dinner or for breakfast with some eggs!

Ingredients:
  • 5 lbs red potatoes, thinly sliced or cubes
  • 1 onion, finely chopped
  • 6 slices bacon, chopped
  • 1/2 cup butter, diced
  • Salt and pepper to taste
  • 9 x 13 inch casserole dish
Directions:
  • Preheat oven to 400 degrees F (200 degrees C)
  • Grease the 9 x 13 inch casserole dish
  • Place potatoes in an even layer in the greased dish
  • Sprinkle onion and bacon over potatoes, then dot with the butter
  • Cover the dish with foil
  • Bake in the preheated oven for 45 minutes
  • Remove the foil and stir potatoes
  • Turn oven to broiler setting and allow potatoes to brown for approximately 5 minutes, until crispy
  • You may need to stir every minute or so to achieve even browning
  • Serve immediately!
