Oven Fried Potatoes and Onions
This simple recipe is easy to make and makes a delicious side dish for dinner or for breakfast with some eggs!
Ingredients:
- 5 lbs red potatoes, thinly sliced or cubes
- 1 onion, finely chopped
- 6 slices bacon, chopped
- 1/2 cup butter, diced
- Salt and pepper to taste
- 9 x 13 inch casserole dish
- Preheat oven to 400 degrees F (200 degrees C)
- Grease the 9 x 13 inch casserole dish
- Place potatoes in an even layer in the greased dish
- Sprinkle onion and bacon over potatoes, then dot with the butter
- Cover the dish with foil
- Bake in the preheated oven for 45 minutes
- Remove the foil and stir potatoes
- Turn oven to broiler setting and allow potatoes to brown for approximately 5 minutes, until crispy
- You may need to stir every minute or so to achieve even browning
- Serve immediately!
