Cattle Drive Casserole

This Cattle Drive Casserole recipe produces a cheesy and hearty ground beef meal!

Ingredients:

• 1 1/2 pounds ground beef
• 1 onion, minced
• 1 taco seasoning packet
• 1/2 cup sour cream
• 1/2 cup mayonnaise
• 1/2 cup shredded cheddar cheese, divided
• 1/2 cup shredded pepper jack cheese, divided
• One 4-ounce can diced green chilies, drained
• 2 cups Bisquick
• 1 cup water
• Nonstick skillet
• 2 bowls for mixing
• 9 x 13 casserole dish

Instructions:

• Preheat the oven to 350°F (175°C).
• Heat a nonstick skillet over medium-high heat
• Add the ground beef and taco seasoning and cook until browned on all sides
• Add minced onion and diced green chilies to the skillet and cook until the onion is tender and slightly browned, about 5 minutes
• In a bowl, combine the sour cream, mayonnaise, and half of each of the shredded cheddar cheese and shredded pepper jack cheese
• Mix well and set aside
• In another bowl, combine the Bisquick and water and stir until a soft dough forms
• Spread the Bisquick dough into a greased casserole dish
• Top the Bisquick dough with the cooked ground beef mixture
• Spread the sour cream mixture over the beef layer
• Sprinkle the remaining shredded cheddar cheese and shredded pepper jack cheese on top
• Bake in the preheated oven for 30 minutes, or until bubbly and browned on top
• Once done, remove from the oven and let it cool slightly before serving
