Cattle Drive Casserole
This Cattle Drive Casserole recipe produces a cheesy and hearty ground beef meal!
Ingredients:
- 1 1/2 pounds ground beef
- 1 onion, minced
- 1 taco seasoning packet
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/2 cup shredded cheddar cheese, divided
- 1/2 cup shredded pepper jack cheese, divided
- One 4-ounce can diced green chilies, drained
- 2 cups Bisquick
- 1 cup water
- Nonstick skillet
- 2 bowls for mixing
- 9 x 13 casserole dish
- Preheat the oven to 350°F (175°C).
- Heat a nonstick skillet over medium-high heat
- Add the ground beef and taco seasoning and cook until browned on all sides
- Add minced onion and diced green chilies to the skillet and cook until the onion is tender and slightly browned, about 5 minutes
- In a bowl, combine the sour cream, mayonnaise, and half of each of the shredded cheddar cheese and shredded pepper jack cheese
- Mix well and set aside
- In another bowl, combine the Bisquick and water and stir until a soft dough forms
- Spread the Bisquick dough into a greased casserole dish
- Top the Bisquick dough with the cooked ground beef mixture
- Spread the sour cream mixture over the beef layer
- Sprinkle the remaining shredded cheddar cheese and shredded pepper jack cheese on top
- Bake in the preheated oven for 30 minutes, or until bubbly and browned on top
- Once done, remove from the oven and let it cool slightly before serving
