Just a quick question, when WCIII loads your map does it load every one of the premade units or just every one referenced/created on the map(in triggers, preplaced, summon abilities, etc.)?

Units are loaded as needed.
Which is why you, sometimes, get the "first time loading lag", for example when getting a Hero from a Tavern.

A simple solution:
Put them all on the map, and remove them at "map init".

It loads all the stuff that was placed manually in World Editor.

It loads a unit if it is only used in a trigger/spell when that trigger/spell is executed/cast. This can cause lag, so I would advise you to place all units this applies to in some place in your map, and then make a trigger to remove them on Map initialization.

yeah i do that, but i was just wondering to see if it made more sense to create custom units to keep it organised or change melee units so i reduced loading times.
