Creole Cake

A timeless easy Cajun cake recipe with a wonderful topping!

Ingredients:

Cake:
  • 2 eggs
  • 2 cups sugar
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk
  • 1 teaspoon soda
  • 1/2 teaspoon vanilla
  • 2 cups flour
  • 1 cup boiling water
  • Bowl for mixing
  • 11 x 16 baking pan
Topping:
  • 1/2 cup butter, melted
  • 1 16 ounce box brown sugar
  • 1 7 ounce can coconut
  • 1/2 cup chopped nuts
  • 1 (5 ounce) can evaporated milk
  • 1 teaspoon vanilla
Directions:

Cake:

  • Mix ingredients in order given
  • Add the boiling water LAST!
  • Bake in the 11 x 16 greased pan for 30 minutes at 350 degrees
  • Pour topping onto top of cake
Topping:
  • Mix all ingredients well and pour over hot cake
  • Place cake under broiler until the topping is bubbling
  • Let the cake cool then cut into squares
