Creole Cake
A timeless easy Cajun cake recipe with a wonderful topping!
Ingredients:
Cake:
- 2 eggs
- 2 cups sugar
- 1/2 cup vegetable oil
- 1/2 cup buttermilk
- 1 teaspoon soda
- 1/2 teaspoon vanilla
- 2 cups flour
- 1 cup boiling water
- Bowl for mixing
- 11 x 16 baking pan
- 1/2 cup butter, melted
- 1 16 ounce box brown sugar
- 1 7 ounce can coconut
- 1/2 cup chopped nuts
- 1 (5 ounce) can evaporated milk
- 1 teaspoon vanilla
Cake:
- Mix ingredients in order given
- Add the boiling water LAST!
- Bake in the 11 x 16 greased pan for 30 minutes at 350 degrees
- Pour topping onto top of cake
- Mix all ingredients well and pour over hot cake
- Place cake under broiler until the topping is bubbling
- Let the cake cool then cut into squares
