Homemade Oatmeal Cream Pies

This recipe makes chewy oatmeal sandwich cookies with a creamy, lightly sweetened center.

Ingredients:

Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 Tablespoon molasses
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 cups quick oats
  • Mixing bowl
  • Cookie Sheet
Filling:
  • 3/4 cup unsalted butter, softened
  • 2 oz full-fat cream cheese, brick style
  • 3-4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 Tablespoon cream (if needed)
  • Mixing bowl
Directions:

Cookies:

  • Cream butter and sugars until fluffy
  • Mix in molasses, vanilla, and eggs
  • Stir in dry ingredients and oats
  • Scoop onto cookie sheet and bake at 350°F for 9-11 minutes
  • Cool completely
Filling:
  • Beat butter and cream cheese
  • Gradually add powdered sugar, vanilla, and salt
  • Adjust consistency with cream if necessary
  • Spread filling on one cookie, then top with another
  • Press gently to form a sandwich
