Pecan Caramel Clusters

A fancy and delicious treat suitable for any holiday or special occasion! Definitely something that should be included in your Christmas Cookies!

Ingredients:
  • 1 14 oz package individually wrapped caramels, unwrapped
  • 1 pound dark chocolate, broken into small pieces
  • 2 cups chopped pecans
  • 3 Tablespoons butter
  • 2 Tablespoons water
  • Parchment paper
  • Microwave safe bowl
  • Fondue fork
Directions:
  • In a microwave-safe bowl add caramels, butter, and water
  • Microwave on high until smooth, about 3 minutes, stirring every 30 seconds
  • Stir in pecans
  • Drop caramel pecan mixture by spoonfuls onto parchment paper
  • Freeze for 15 to 20 minutes
  • Add and place the chocolate in a microwave-safe bowl and microwave on high until melted and smooth for 1 to 2 minutes, stirring every 15 seconds
  • Dip each caramel cluster into chocolate using a fondue fork until coated
  • Place on parchment paper to dry
  • Chill until firm - if necessary

Notes:

  • Use dark chocolate for this Pecan Carmel Clusters to make it the Best, but suitable replacements are semi-sweet or milk chocolate
