Pecan Caramel Clusters
A fancy and delicious treat suitable for any holiday or special occasion! Definitely something that should be included in your Christmas Cookies!
Ingredients:
- 1 14 oz package individually wrapped caramels, unwrapped
- 1 pound dark chocolate, broken into small pieces
- 2 cups chopped pecans
- 3 Tablespoons butter
- 2 Tablespoons water
- Parchment paper
- Microwave safe bowl
- Fondue fork
- In a microwave-safe bowl add caramels, butter, and water
- Microwave on high until smooth, about 3 minutes, stirring every 30 seconds
- Stir in pecans
- Drop caramel pecan mixture by spoonfuls onto parchment paper
- Freeze for 15 to 20 minutes
- Add and place the chocolate in a microwave-safe bowl and microwave on high until melted and smooth for 1 to 2 minutes, stirring every 15 seconds
- Dip each caramel cluster into chocolate using a fondue fork until coated
- Place on parchment paper to dry
- Chill until firm - if necessary
Notes:
- Use dark chocolate for this Pecan Carmel Clusters to make it the Best, but suitable replacements are semi-sweet or milk chocolate
