Banana Cream Cheesecake Bars

Banana Cream Cheesecake Bars are great for a dessert or a snack anytime.

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 1/4 cup sugar
For the filling:
  • 2 ripe bananas, mashed
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
For the topping:
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • Sliced bananas, for garnish
  • 8x8-inch baking pan
  • Parchment pape
  • Mixing bowl
Directions:
  • Preheat oven to 350°F (175°C)
  • Line an 8x8-inch baking pan with parchment paper
Make the crust:
  • Mix graham cracker crumbs, melted butter, and sugar and press into the bottom of the prepared pan
  • Bake for 8 minutes
  • Remove from oven and cool slightly
Prepare the filling:
  • Beat cream cheese and sugar until smooth
  • Add eggs one at a time, then vanilla and mashed bananas
  • Pour over the crust and smooth the top
  • Bake for 30-35 minutes, or until set
  • Cool to room temperature, then refrigerate for at least 3 hours
For the topping:
  • Whip heavy cream, powdered sugar, and vanilla until stiff peaks form
  • Spread over the cooled cheesecake
  • Garnish with sliced bananas before serving
