Old Fashioned Chicken and Dumplings

Old-fashioned chicken and dumplings is a classic comfort food dish that features tender pieces of chicken cooked in a creamy broth with fluffy dumplings.

Ingredients:

For the Chicken Stew:

  • 1 whole chicken (about 3-4 pounds), cut into pieces
  • 2 tablespoons butter or vegetable oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 cup frozen peas (optional)
  • Fresh parsley for garnish (optional)
For the Dumplings:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 cup butter, cold and cut into small pieces
  • 3/4 cup milk
Directions:

For Chicken Stew:

  • In a large pot or Dutch oven, melt the butter or heat the vegetable oil over medium-high heat
  • Add the chopped onion, carrots, and celery
  • Cook for about 5 minutes, or until the vegetables begin to soften
  • Add the minced garlic and cook for an additional 30 seconds, until fragrant
  • Sprinkle the flour over the vegetables and stir to combine, creating a roux
  • Cook for 1-2 minutes, stirring constantly
  • Gradually pour in the chicken broth, stirring continuously to prevent lumps from forming
  • Add the dried thyme, salt, and black pepper
  • Add the chicken pieces to the pot
  • Bring the mixture to a gentle simmer
  • Cover and let it cook for about 45 minutes to 1 hour, or until the chicken is cooked through and tender
  • Remove the chicken pieces from the pot and let them cool slightly
  • Shred the chicken meat and discard the bones and skin
  • Return the shredded chicken to the pot
  • If using peas, add them to the pot.
  • Let the stew simmer for another 5-10 minutes
For the Dumplings:
  • In a mixing bowl, whisk together the flour, baking powder, and salt.
  • Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Gradually add the milk, stirring just until the dough comes together.
  • Drop spoonfuls of the dumpling dough onto the simmering chicken stew.
  • Cover and let the dumplings cook for about 15-20 minutes, or until they are cooked through and have doubled in size.
Serve:
  • Ladle the chicken stew with dumplings into bowls.
  • Garnish with fresh parsley if desired
