Old Fashioned Chicken and Dumplings
Old-fashioned chicken and dumplings is a classic comfort food dish that features tender pieces of chicken cooked in a creamy broth with fluffy dumplings.
Ingredients:
For the Chicken Stew:
- 1 whole chicken (about 3-4 pounds), cut into pieces
- 2 tablespoons butter or vegetable oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 8 cups chicken broth
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 1 cup frozen peas (optional)
- Fresh parsley for garnish (optional)
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/4 cup butter, cold and cut into small pieces
- 3/4 cup milk
For Chicken Stew:
- In a large pot or Dutch oven, melt the butter or heat the vegetable oil over medium-high heat
- Add the chopped onion, carrots, and celery
- Cook for about 5 minutes, or until the vegetables begin to soften
- Add the minced garlic and cook for an additional 30 seconds, until fragrant
- Sprinkle the flour over the vegetables and stir to combine, creating a roux
- Cook for 1-2 minutes, stirring constantly
- Gradually pour in the chicken broth, stirring continuously to prevent lumps from forming
- Add the dried thyme, salt, and black pepper
- Add the chicken pieces to the pot
- Bring the mixture to a gentle simmer
- Cover and let it cook for about 45 minutes to 1 hour, or until the chicken is cooked through and tender
- Remove the chicken pieces from the pot and let them cool slightly
- Shred the chicken meat and discard the bones and skin
- Return the shredded chicken to the pot
- If using peas, add them to the pot.
- Let the stew simmer for another 5-10 minutes
- In a mixing bowl, whisk together the flour, baking powder, and salt.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Gradually add the milk, stirring just until the dough comes together.
- Drop spoonfuls of the dumpling dough onto the simmering chicken stew.
- Cover and let the dumplings cook for about 15-20 minutes, or until they are cooked through and have doubled in size.
- Ladle the chicken stew with dumplings into bowls.
- Garnish with fresh parsley if desired
