Skillet Shrimp Quinoa and Brown Rice

This is a use your best judgement on your ingredient amounts here. Size it up for 2 boxes of the Quinoa mix or accordingly to how much you are making. This is a real easy recipe the trick here is the Cast Iron Skillet! As soon as I get to make this I will update it with exact amounts for the Ingredients.

Ingredients:
  • 2 boxes Far East brand quinoa and brown rice mix
  • Fresh shrimp
  • Fontina cheese
  • Shredded onion
  • Red bell pepper
  • Green onion
  • Fresh garlic chopped
  • Olive oil
  • Butter
  • Salt and pepper or Cajun Spice (Tony Satcheries or Slap ya Mama)
  • 1 pot
  • 1 cast iron skillet
Directions:
  • Saute all veggies in olive oil and butter remove set aside
  • Cook quinoa as directed on side of box including season pack then added veggies to that
  • Saute shrimp remove from pan
  • In skillet put cooked quinoa rice and veggies then layer shrimp on top
  • Add fontina cheese on top and bake at 350 for only 15 minutes
  • Last 2 mins, turn to broil to brown lightly and so cheese will bet bubbly
Notes:
  • Serve with salad and garlic bread
