Skillet Shrimp Quinoa and Brown Rice
This is a use your best judgement on your ingredient amounts here. Size it up for 2 boxes of the Quinoa mix or accordingly to how much you are making. This is a real easy recipe the trick here is the Cast Iron Skillet! As soon as I get to make this I will update it with exact amounts for the Ingredients.
Ingredients:
- 2 boxes Far East brand quinoa and brown rice mix
- Fresh shrimp
- Fontina cheese
- Shredded onion
- Red bell pepper
- Green onion
- Fresh garlic chopped
- Olive oil
- Butter
- Salt and pepper or Cajun Spice (Tony Satcheries or Slap ya Mama)
- 1 pot
- 1 cast iron skillet
- Saute all veggies in olive oil and butter remove set aside
- Cook quinoa as directed on side of box including season pack then added veggies to that
- Saute shrimp remove from pan
- In skillet put cooked quinoa rice and veggies then layer shrimp on top
- Add fontina cheese on top and bake at 350 for only 15 minutes
- Last 2 mins, turn to broil to brown lightly and so cheese will bet bubbly
- Serve with salad and garlic bread
