Creamy Cajun Crockpot Chicken

A creamy Cajun crock pot recipe that is set it and forget it. Delicious!

Ingredients:
  • 1 1/2 lbs chicken breast
  • 1 tablespoon butter or olive oil
  • 1 tablespoon garlic jar or squeeze garlic (can use powder)
  • 1 cup onion, chopped
  • 1 cup carrots, chopped
  • 1 1/2 cup celery, chopped
  • 1 1/2 cup bell pepper, chopped (any color or a mix)
  • 2 tablespoon Old Bay or Cajun seasoning
  • 2 teaspoon hot sauce
  • 1 14 oz can fire roasted tomatoes, drained
  • 3 cups chicken broth
  • 1/4 cup heavy whipping cream
  • 8 oz cream cheese, softened
Directions:
  • Add everything to the crock pot except for the cream cheese and heavy whipping cream
  • Cook on low for 6 to 7 hours
  • Remove the chicken and shred
  • Add the cream cheese and heavy whipping cream to the crock pot
  • Add shredded chicken back into the crock pot
  • Cook for additional 30 minutes
  • Stir it up and serve
Enjoy!

Note:

  • Serve over rice or pasta
  • Stir flour into the sauce if you want to thicken it

Old Bay OR Cajun seasoning?! Having lived in Baltimore for a few years & having family in Louisiana, having those seasonings be interchangeable could result in a paddlin' :p

I kid of course, this sounds like a good crock pot recipe! I'll have to try it.

I already have the chicken defrosting to make this either tomorrow or thursday. Old Bay and Cajun Seasoning are apparently used interchangeably as a cajun spice. I prefer Slap Ya Mama! Or Tony Caecheres. Its going to be good! I will be slapping the mama on this one :)

I used Tony Caecheras on this one. I have old bay but I save that for a biscuit recipe I have.

OMG! If you are going to cook with a Crockpot it is best to be at work or something while it is going because the smell is going to be in there all day. If you guys could smell it it in here, it is so good but it still has like 2 hours and this smell cannot be ignored. I want to eat it NOW!

Finished Product! Added two Tablespoons of flour to thicken up the sauce. Cooking time was 8 hours not 6 and a half.
