Sour Cream Chicken Enchilada Casserole
An easy and delicious Sour Cream Chicken Enchilada Casserole recipe.
Ingredients:
- 4 cups diced cooked chicken
- 1 can cream of chicken soup
- 8 oz (1 cup) sour cream
- 2/3 cups milk
- 1 4 oz can of diced green chiles
- 2 Tablespoons dried minced onion
- 1 teaspoon garlic powder
- Pepper to taste
- 12 corn tortillas
- 2-3 cups shredded sharp cheddar cheese
- Large mixing bowl
- 13 x 9 baking dish
- Spray the baking dish with cooking spray
- Preheat oven to 350 degrees
- In mixing bowl - mix together soup, sour cream, milk, chiles, onion, garlic and pepper
- Line the bottom of the baking dish with 6 tortillas
- Sprinkle with 3 cups of chicken
- Pour 1/2 sauce over top and spread to cover
- Sprinkle with 1/2 of the cheese
- Repeat above with remaining ingredients for the final layer
- Bake for 30-40 minutes or until hot and bubbly
- Let stand 10-15 minutes before serving
