Use triggers to change movement type

Is there any sort of a trigger to change a unit's movement type (foot to fly and back). It can be JASS or GUI. +rep

Just add the crow form ability to the unit. Remove the ability to make it a ground unit again.

and how would you do that, setting fly height only works on flying units (or as zaraf suggested, units with crow form), it wouldn't work

OR you could go the EASY way and just add/remove Crow Form. Seriously, why complicate things when they are so simple?
