Snickers Cheesecake
This recipe creates a Snickers Cheesecake that is filled with chocolate on a graham cracker crust topped with Snickers!
Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 6 Tablespoons unsalted butter, melted
- 9-inch springform pan
- 4 (8 ounce) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 eggs
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 1 1/2 cups chopped Snickers bars
- Extra chopped Snickers bars for topping
- 1 cup heavy cream
- 8 ounces semi-sweet chocolate, chopped
- For the Caramel Sauce:
- 1 cup sugar
- 6 Tablespoons unsalted butter, room temperature
- 1/2 cup heavy cream, at room temperature
Prepare the Crust:
- Preheat the oven to 325°F (163°C)
- Mix graham cracker crumbs, sugar, and melted butter
- Press into the bottom of a 9-inch springform pan
- Bake for 10 minutes, then cool
- Beat cream cheese and sugar until smooth
- Add vanilla, then eggs one at a time, mixing just until incorporated
- Stir in sour cream and heavy cream
- Fold in chopped Snickers
- Pour over crust and smooth the top
- Bake for 55 minutes or until set but slightly jiggly in the center
- Turn off the oven, open the door slightly, and let the cheesecake cool in the oven for 1 hour
- Remove and cool completely on a wire rack, then refrigerate for at least 4 hours
- Heat heavy cream until just boiling, then pour over chopped chocolate
- Let sit for 5 minutes, then stir until smooth
- Cool slightly before pouring over the cheesecake
- Melt sugar over medium heat, stirring constantly until a golden amber color
- Add butter carefully, stirring until melted
- Slowly drizzle in heavy cream, stirring continuously until smooth
- Cool before drizzling over the cheesecake
- Once the cheesecake is chilled, pour the ganache over the top
- Add extra chopped Snickers
- Drizzle with caramel sauce

- Total Time: 8 hours 35 minutes (includes chilling)
