How do I add special attachments after a unit equips it like in pimp my ghould or peon?

Simply create a dummy ability based off Armor Bonus.

Clear the values, and set

"Art - Target" to your item model;
"Art - Target Attachment Point 1" to "hand,right" or whatever part you prefer to attach your model to.

And add that ability to your item. Now when the item's picked, Voila - Attachment shows up on your unit!
